This week’s blog is a my very easy recipe for homemade potato wedges with garlic and chive dip! These are so easy to make and are pretty tasty too? if you would like to check out this recipe, then just keep reading!
For the potato’s you can either leave the skin on and give them a good wash or peel them. For this post I peeled the potatoes. To be honest I normally leave the skin on, but I most have thought I was making mash potatoes because I had them peeled before I realised what I was doing!! Anyway, its chef preference and let’s face it, skin on is less work!
For the dip I added two cloves of garlic, again chef’s preference how garlic-y (is that a word?) you like it.
- 7 medium sized potatoes
- 1 x tbsp olive oil
- 1 x tsp garlic salt
- 1 x onion powder
- 1 x tbsp paprika
Garlic & Chive Dip
- ½ cup mayonnaise
- juice of half a lemon
- 2 x cloves of garlic (crushed)
- ¼ tsp salt
- few sprigs of chives
To make the wedges:
Preheat the oven to 220°c (430F). If you prefer the skin on, just wash potatoes, otherwise peel them. Make sure they are completely dry as this will help ensure that they get crisper in the oven. Cut them into wedge size slices.
Put the wedges into a bowl and add the olive oil, garlic salt, onion powder and paprika and mix. Put the wedges onto a baking sheet and cook for 40 minutes.
To make the dip:
Add the mayonnaise, lemon juice, crushed garlic cloves, chopped chives and salt and mix together. Easy?
